Today is Shrove Tuesday widely known as Pancake Day. Because Christopher was home last weekend and because I am working this evening, we made our pancakes on Sunday. They were delicious but sadly I forgot to take an photos.
In the spirit of Pancake Day I did however eat a couple of Scotch Pancakes this morning which were spread with butter after a quick zap in the microwave.

We did not keep up the pancake tradition this year I am afraid but they are often available here on breakfast menus - usually made with buttermilk and often served with rashers of very crisp streaky bacon and a little jug of maple syrup to pour over. Also with blueberries - which is my preference! X
